Indian Sweet: Homemade Coconut Barfi Recipe!

Hope you all are having a fabulous week! Wow, can’t believe July is almost coming to an end 😦

In today’s post, I will be sharing with you all a recipe that I’m pretty sure you guys will all love! In India, there are just numerous types of scrumptious sweets/desserts that are just so delicious and are made during occasions such as Diwali, etc. Some of my fave Indian sweets are Rasmalai, Rasagulla, Gulab Jamun, and most importantly Coconut Barfi πŸ™‚

Coconut Barfi is just absolutely tempting and tasty! This sweet is very similar to macaroons that we eat here in the US so if you guys are a big fan of macaroons then you’re are def gonna enjoy this amazing sweet. It’s just simply irresistible! This recipe is very quick and easy to prepare & is perfect to satisfy your sweet cravings after a meal πŸ™‚

Ingredients

  1. 1 cup of unsweetened condensed milk (Nestle brand)
  2. 2 cups of shredded coconut
  3. 2 spoons of sugar
  4. 2 spoons butter
  5. 3-4 cashew nuts

Preparation Time: 20 min

Difficulty Level: Β Easy

Procedure:

1. First heat 2 tablespoons of butter in a pan and let it melt on medium flame.

2.Β  Add 1 cup of unsweetened condensed milk and keep stirring for 5 min

3. Add the 2 cups of shredded coconut and stir for 3 min

3.Β  Add 2 spoons of sugar and stir for another 5 min until the mixture gradually thickens and the mixture completely does not stick to the pan

4.Β  Then pour the mixture to a greased tray and let it cool for 10 min

5.Β  In the meantime, sprinkle 3-4 cashew nuts to the mixture as it cools

6. Keep the mixture in the refrigerator for 1 hour

6. Slice the coconut barfi into the desired shape (in this small squares as shown below)

7. Voila, the coconut barfi is now ready to be served for a delicious dessert after a tasty lunch πŸ™‚
